Mascarpone and courgette gnocchi

Originally from Good Food, I tried this recipe for the first time the other week and absolutely loved it!

I’m all about comfort food and this is the perfect meal for the days when you need a pick me up – kind of like a hug on a plate. The gnocchi is squidgy and warming, the courgettes give it that Mediterranean holiday-esque vibe and the lemon cuts through perfectly to give it a refreshing kick.

Best of all it can be on the table in just 20 minutes and doesn’t take much in terms of ingredients.

Ingredients


300g fresh gnocchi
1 tbsp olive oil
1 red chilli, sliced
1 courgette, cut into thin ribbons     4 spring onions, chopped
zest 1 lemon
2 tbsp mascarpone
50g Parmesan, grated

Method


1. Cook the gnocchi as per instructions, then drain leaving about a ladle of water for later
2. Heat the oil then fry the chilli and courgette until soft
3. Add onions, zest of the lemon, mascarpone, half the Parmesan and the cooking water. Mix until smooth
4. Add gnocchi and heat through
5. Season well, serve onto 2 ovenproof dishes, scatter with remaining parmesan and grill until bubbling. If you don’t have 2 ovenproof dishes then just use one and serve onto plates once it’s grilled
6. Serve with dressed mixed leaves and black pepper / additional parmesan as required

Foodie tip:
Season it well; we used lots of freshly ground black pepper on top at the end. For the leaves, I’d say to go peppery again… we used spinach leaves but I’d also recommend watercress or rocket.
